The agave maturity varies between species, agricultural practices and regional conditions, resulting in spans of time that go from 3 up to 30 years.
The most common specie for mezcal production is Agave angustifolia, also known as “maguey espadín”, which can take up to 9 years before being harvest. However, more than 30 agave species are currently used to make this magical drink.
Biodiversity of agaves
Agave is also known as “maguey” in Mexico where it is considered to have its center of origin, and posses 75% of the agave species of the world, many of which are endemic to this territory.
Agaves’ distribution goes from North to South America. Adapting to many weather and climate conditions. Part of this rustic and amazing adaptability is owed to the agavins that result from the CAM photosynthesis of these plants.
